I was craving something sweet and so was my lovely partner. One of his favorite flavor combinations is chocolate and peanut butter so I whipped up these super fast cookies.
Preheat your oven to 350 degrees.
Combine together 2 1/4 cups of flour, 2/3 cup unsweetened baking cocoa powder (I use Hershey), 1 tsp baking powder and 1/4 tsp salt. Cream together 1/2 cup of margarine, 1/2 cup peanut butter, 3/4 cup granulated sugar, and 2/3 cup light brown sugar until it’s creamy. Add 1 tsp vanilla. Then add 2 eggs, one at a time. Beat the first fully into the mixture before adding the second.
Slowly add the flour mixture. The batter is going to get really thick. My stand mixer started having trouble as I added the last bit of flour but don’t worry, that’s the consistency you want.
Bake in a preheated oven for 10-12 minutes, until the top is just starting to crack. Remove them from the oven and let them cool a little before digging eat. Try not to eat them all in one sitting!
